We love spatchcock chicken and have been having quite a bit...so I was looking to mix it up a little bit...A pair of chickens, cayenne garlic EVOO, Yardbird, and a touch of cayenne/habanero dust....so far, pretty normal.
Then I added thin orange slices and onto the smoker at 250 until IT 165.
As it got close, I squeezed the juice from the orange ends over the chicken. Here's how it looked hot off the grill.
After it rested, I pulled the orange slices and glazed them (and the birds) with a light coating of mango habanero Texas rib candy. Very tasty! The orange flavor was just at the amount I was looking for, not overpowering at all. Thanks for looking.
