Not sure if anyone is a fan of southern cooking..... but here goes.
My mom was a good southern cook, I grew up on this stuff.
I removed the stems and washed some collard greens..
made a pork/beef sausage mixture, then stuffed and rolled them.
Added chicken stock and a splash of whiskey (optional) Didn't have any actual southern comfort. lol
Onto the Memphis Pro with some mac n cheese....
I cooked them covered for about 30 minutes then unfoiled for about another 30 minutes. I used an instant read thermometer to make sure the pork was up to temp.
Made some biscuits, brushed them with bacon drippings, then smoked on the Pro..
The smoked biscuits, mac n cheese, pork stuffed collards with a drizzle of hot bacon dressing...
I think I actually felt comforted after eating this. lol
