Tia Strube sent me some Strube Ranch Wagyu Top Sirloin. I dont usually cook top sirloin...but wagyu top is like others rib roast. I put some double secret rub and little louies seasoned garlic salt/w black pepper and put it on the MAK at 275 until the internal hit 130. Then I transferred it to the Memphis pro and seared for 2 minutes a side at 500 rested and sliced

These are so big I have to cut them in half with the grain before slicing against the grain

Then I served it with Little louies Salad Some nice french bread and My good friends Jimmy aqnd Janet D's home made gnocci!
