Rubbed with A1 and Penzey's Chicago Steak seasoning. Gave it about 5 hours under a slight vacuum.

Dusted with Rodak's Coffee Rub, and naked into the Traeger on 'smoke' (170-190° or so) for a couple hours.

I've got a braise in the works for an overnight ride. This will be 'pulled beef' when it is done.

(ended up not using the banana peppers, doubling the wine, a half dozen glugs of Starne's, and adding some CYM)

Flipped and dusted with more Rodak's, then into the pan for an overnight ride..

Traeger is running at 180 P3. (hovering around 190-200°)


We'll check back in the morning...

(cue 'morning')

I'm up! Coffee made, Army fed..

Chuck is at 161°, Traeger is hanging around 190°. I added another inch or 2 of water to the pan, and we'll let him ride..

A few hours later..

I put on my hazmat gloves and got 'interactive' with it... (burned a couple digits along the way)
