How about some Pork chops Braised with Apples and some smoky Mac & Cheese on a cold windy day?
I started with some 1" thick center cut loin chops and rubbed them with Sage, Salt, Fresh Cracked Pepper, Rosemary & Nutmeg. Apple pellets for smoke made sense. I put them on about 225° for 30 min. to smoke.
The smoked chops went into a cast iron pan topped with Gala apples, sweet onion & some braising liquid: 1/2 cup Beer, 1/4 cup Brown Sugar 1/4 cup Apple Cider Vinegar (to emphasize the apple theme). Back on a 325 - 350° pit for about an hour.
The braised chops were removed from the pan and the rest went on the stove to reduce down to a thick sauce then served over the chops.
Done and Plated with some Mac & Cheese & Corn Pudding.
I needed some comfort food.
