Hey, I'm new to this site and I'm interested in what others do with their smokers. Been using Traeger smokers for 15-20 years and Big Green Eggs for 3 years. My wife and I had a meat market for 20 years, sold it and went full time in the catering business. Going on 12 years at this. Cooking meat and eating it is not only my business but also my hobby. I use the bigger commercial smokers in my business and a smaller one at home. I bought the BGE because The Traeger, while great for most meat, doesn't do a good,rare on the inside, charred on the outside, steak. I have since cooked everything from corn on the cob, baked potatoes to pizza on the egg. Along with ribs and butts and brisket to chops, whole chix, burgers and sausage (bought a little grinder & been making my own). I see you all take a lot of pix, I'll try to get the wife's camera and send some along. Looking forward to seeing what y'all are doing. Chas.
