Sausage and Peppers

Had some of the in laws over for dinner and they requested that we do Italian sausage and peppers (a big accomplishment as they are VERY Italian!)

Here we go:

Fresh italian sausage onto the MAK @ 250 to smoke for about a half hour

Assemble the rest of the ingredients for the party

Sausage done smoking

Onto the MAK griddle @400 to finish them off

Brown up the onions and bell peppers until soft using the sausage fat

Add fresh basil, oregano, and garlic

Add Marsala wine, diced tomatoes, and tomato paste

Slice the sausage

Into the mix and drop the temp to 300 (gives you a nice hint of smoke)

This has become a family favorite and I love the fact that my in laws love it! It is very versatile too you can do it on a bun or serve it over pasta for a nicer dinner. If you don't have a MAK griddle a big cast iron pan works too. The key when doing it as a sandwich though is finding good bread.

That's some good looking chow Carter. I can see myself also using this as a guide for other meats and poultry and like you, slapping some in a nice roll or over some rice.

I presume that any cast iron griddle will work as long as it fits in the MAK?

Yep, If it fits on the MAK it should work, just make sure it is big enough to hold all the ingredients. I have done this in a Dutch Oven over a campfire so there is no real wrong way to cook it.

I have not eaten yet today... I should not be looking at this. But I just can't help myself; it just looks so good all piled in that sausage roll like that.

i am sitting here at lunch time looking at this. not fair at all.

Same here, not fair at all! Although it could be worse, at least I'm eating a few of my left over ribs (the only left over ribs!) and some baked beans from this weekend.
