Spatchcock definition and origin

OK by now most of you have figured out that Spatchcock Chicken is fabulous.

But how did it get the dname?

According to Oxford dictionary is is of Irish origins...To Spatch the Cock To dispatch the Chicken. It originally referred to a young chicken less than 6 weeks old. The Indian people also lay claim to the term....

I was just thinking about that after seeing Susan's entry - great minds... lol.

I plan to spatchcock a bird this this evening. It's my absolute favorite way to cook poultry. I love that it just about cuts the cooking time in half which translates to a juicier bird (Mmmm).
