Ok Memphis was kind enough to replace my painted advantage....with one of the new stainless models.
Here is the last time it will ever look like this

Now for the meal. Heated the Memphis Advantage to 500 I did a little Swordfish ala Pauma...for where this cooker is...its in the middle of an orange grove and a golf course
Started with the juice of one and a half oranges straight from the tree...crushed up 4 cloves of garlic, some lemon olive oil, some clementine tangerine olive oil, some blood orange balsamic glaze, and some soy

Hit it with surprise! Little Louies with Pepper and Desert gold and let it marinate

Put it on the grill grates and two minutes...flip...two minutes flip diagonally and two minutes and flip diagonally again and serve

I always thought so much attention was on the pro that the advantage is a real sleeper. Now with the stainless construction it should get more love.
