Any tips or recipes for smoking a Wild Turkey?

My Dad shot a turkey last weekend and wants me to smoke it. Not one to deny a smoking challenge I told him I would get it done. My Dad has never been too thrilled with the taste of the wild turkey he's shot in the past so I want to wow him with this.

Anyone every do one on a MAK or other pellet pooper?

I would brine that sucker for sure. Maybe a buttermilk brine? They say that reduces the gaminess a bit. I think Nepas has done one on his MAK.

had a couple in the past. Boned out and wrapped, brine and smoked, had a butcher that did it.
Our season opens this Monday and if I am successful I will be doing the same thing again.

Is the bird whole?
Some guys just breast them out and take the drumsticks. If you did it that way I would marinate it in olive oil pressed garlic and lea and perrins and maybe inject the breasts.
A buddy of mine splits the breast and stuffs them with a standard stuffing and bacon.
What ever you do I would do it slow to keep it tender.
By the way how big was it beard/spurs, I just found a leg from a wolf kill that had an 1 1/4 spur.
