It comes frozen...It may thaw out a little....its okk to let it thaw out enough to cut and re freeze...just dont let it sit for a week and then re freeze.

We authorize your card for the biggest weight and then when we ship charge you for the actual poundage. the price on the website is the high end if you get a whopper. You can also request the lightest one they have in the comment section.

Trim it up for steaks....save a chunk for a roast or if you are having that super special dinner this is killer.
