Interesting-USDA changes the recommended IT for whole cuts of pork to 145 with a 3 minute rest time, down from 160. It is now OK to serve pink pork......

I'm just happy I can show "Official Government Proof" to my sister in law and other doubting guests that my pork loin is not going to kill the whole family!
