I used some of the last batch of Memphis Pro smoked pork..

Set up my fancy burner.. a section of pipe with rebar legs, expanded metal grate and a hot water heater burner.
Sauted some onions, garlic and peppers in a bit of oil.
added the pulled pork and a dash of fajita sauce...
heated some tortillas..
served "self serve" style... grab a napkin, and a hot tortilla, top with the pulled pork onion pepper mix, a dash of sauce, a squeeze of fresh lime and a bit of pico
