I finally got around to making that fattie piston this weekend. Digging through the freezer I thought "why not a venison wrapped - venison stuffed fattie"? So, here's what I used. Started with 1 1/4 pounds of my homemade venison bulk sausage for the outer wrap. For the stuffing, I used a smaller front quarter muscle, diced it and browned it along with some potato, sweet yellow pepper, garlic, fresh herbs. Once all of that cooled I combined it with crumbled goat cheese.
