Venison Meatballs

What do you do when you pull a couple of pounds of venison out of the freezer? I get creative...

Mix up 1 lb ground venison
minced garlic
ground mustard
orange zest
fresh ground black pepper
a splash of half & half (need some fat, the meat is too lean)
bread crumbs

Smoked them for an hour before bumping temp to 250.

(not sure if there's a better way to cross reference) - anyways did it exactly the same except swapped beef stock in for chicken stock. This seems to be liked by all.



Serve with chips, fresh guacamole, and a crisp beverage.

the whole thing looks fantastic. nice job partner. the picture of the plate w/ the cocktail looks great. i wanted some of that. :)

This would be a difficult decision, the venison fattie or the meatballs? Okay, some of each.
