Bacon Wrapped Pulled Pork Stuffed Spatchcock Chicken

You all probably all saw the pics of the Bill Murray cook...But he brought a chef friend along that I was unfamiliar with (until I googled him) Kerry Simon...He won the Iron Chef and has 6 very hot and trendy restaurants. The next day he texted me and said "Whats Up?" I said I dunno ...lets cook. He said sounds great but I am going to watch.
No pressure.......arrrrrrghghghhhh

So I looked in the fridge saw chicken, Bacon, Leftover Pork and went to work...Might as well swing for the fences.

Started with bacon weave

then I stuffed pulled pork between the bone and breast meat Seasoned it with Little Louies with Black Pepper and smoked at 275
