Sausage/Jerky/Biltong cutter

My Sausage/Jerky/Biltong Cutter.

Been working on this for a few days.

The blade i got at wally mart this morning. Its a 4" SS pizza cutter blade. I put a better edge on it and did a handle re design.

This is just my working prototype.

Cuts pretty good. Made use of the whole radius of the blade. Thought that if i cut in half the blade would get dull in the hit position. This way the blade can rotate and use all the surface.

Still have some work to do on it.

I used a sharpener i use for broadheads, works good.

I'm still doing some mockup, going to put nylon washers between the arm and posts so the arm moves better. Maybe make the posts an inch taller and put some rubber feet on the bottom.

I have had some heavy smoked Lamdjaegers hanging to. This cutter when done will be the LJ cutter.

Just took the LJ off the dowel this am.

Rubbed down with vinegar to eliminate any mold that might have been on them.

Rick,
I have used a piece of copper tubing as a bushing (something with the ID about the size of the OD of the screw). This works good, plus you can lube it if necessary. Use the nylon washers as spacers for tension control.

Nice Rick. I can see that being used in a setup similar to a miter saw using stops to get equal length cuts of sausage.

I like it!
