Good taste, just needed to let cook longer till it pulls away from the bone, I was confused by several different instructions, one that said an internal temp of 185 degrees and another for 1.2 hrs per pound, so being unsure of which to follow I pulled it off when the temp was 185. My next one will be even better.

i don't pull mine between 190 - 200º. more or less 195º is what i shoot for. sometimes i foil and sometimes not. depends how lazy i am. i like them either way. 7 hours? i have never cooked one less than 12 hours. go higher in temp partner. ;)

I take the IT to 195+°, wrap tight in foil and in some old towels. Let it rest a few hours in a small foam cooler (or your microwave in a pinch) and then pull.. The magic will happen while it is resting.
