Ok Im back from the Royal and decided to cook something outside but not BBQ

Very easy to make and when your wife of hubby complains about too much bbq cook this

Slice between the bone and meat a pocket the whole length of the chicken breast and stuff with herbed Goat Cheese

Put a basil leaf or two under the skin then season LIGHTLY with Little Louies with Black Pepper Heat smoker to 325

This reminds me of your goat cheese stuffed spatchcock. It looks good.

Is the metal ring some kind of pin to hold the slit closed?

Looks good! I would have thought the goat cheese would Ooze out. You must have cooked them meat side down the entire time?

Oh ok I see how you stuffed it now. I've been wanting to try goat cheese and had plans for another recipe but I'll have to try this as well :D

Do something like that with boneless chicken breast. These have italian pepper and swiss cheese. Baste with some BBQ sauce. Very simple. Keeps the meat from having that dry taste.
