Grilled Pork Butt

This isn't even smoked. I didn't have the time....
I was in a hurry to cook this so I deboned the pork butt (about an 8lber)... butterflied to lay flat. Scored and drizzled with olive oil, seasoned with garlic, kosher salt and cracked black pepper.
Then threw it on the grill at medium low heat.

I mopped with a cider vinegar, jalapeno, onion, garlic, salt and pepper mixture..
also flipped the meat 4 times while it roasted.
The meat was ready in 1 1/2 hrs.

made some indian fry bread...

topped the fry bread with cubed roasted pork

added asadero cheese, lettuce, fresh pico and some cream...

I lucked out... it was tasty.

The pork was moist and tender.... really surprised me. lol
I guess it was about the same as grilling an extra thick pork chop!

That is not luck! That is years of practice shining through. Great job. A nice cold beer and great looking ( and tasting) meal. What's not to like! Great job, as usual, Jeanie.

Man, that looks awesome! Love fry bread tacos and those are out of bounds! Great idea with the pork too, thanks for sharing this great cook Jeanie.

way cool jeanie. i never would have thought of butterflying a pork butt. your always teacher. ty. food looks bomb by the way. i love that you cooked it on the hasty bake. do you need me to send ya some FT jeanie? :)
