I wished now I had better planned and took more photos so I could have entered this in this weeks contest. Country Style Ribs, smoked at 175 dgrees for 45 min then finished off at 350 degrees to an IT of 165 degrees. Rested at 20 min. BBQ sauce is Curly's Hickory. (Still working on my own blend).

Tenderness was OK, I can not say the meat was falling off the bone, but it was not tough. I am willing to entertain suggestions for making them fall off the bone.

An IT of 165F is not going to fall off the bone.

If that is your desire, then I would take them to at least 185F.

Most "country style" ribs are really sliced pork butt, and should be cooked in a similar fashion.
