Its funny I find that I am cooking more and more things between 250 and 275....Things I used to cook at 225 like ribs I've bumped to 250 and tenderloins that I cooked at 300 Im going to 260-275.

chicken I started at 350 and am down to 300....

On roasts I used to sear ALWAYS. Last few times I havent and have enjoyed the smoke and texture of just letting it go...

What about you?

275 is the magic number on the MAK, lots of smoke with just the right amount of heat! I have been cooking Turkeys at this temp with great success.

i have been learning from ya'll. what seems to work for me is ribs and pork butt 225. chicken, fatties and ABT's 300 - 325. guess what. my grill grates and bp pigskin pack is being delivered today. wife and kids got school tonight. quite around here. going to fire up the lil tex to high, throw on the grill grates and but on a new york. not to thick (1" or so). i figure 3-4 minutes per side. going to bp a baked potato and some french bread. just got a 12 pack of FT. going to be a good night at sparky's house. ya GIANTS.....
