Christmas Cook Part 1

Picked up a half of Kurobuta shank last week... Threw it in the cureing liquid for about 5.5 days... Removed and let it rest in the fridge for another day and a half.. Christmas morning onto the MAK at 220... Let it go about 7hrs then glazed and back on for another couple..

Picked up a nice Prime NY Strip Loin from Costco... Cut about 2/3rds of for Christmas and the rest was cut into steaks..

Nice marbleing

Chopped up some garlic, a shallot and fresh herbs and some evoo... Rubbed the roast and then dusted with some of the favorites.... Into the fridge overnight...

Part 2

Turned the mak up to 275 and threw the roast on till an IT of 125 pulled and rested while I turned up to high.. Also had some fingerling potatoes going at the same time...Put the roast back on till an IT of 140... Was a little too long for me...Will pull a little earlier next time...

Great Christmas meal...Everyone loved it and BP I may had made a sale for ya. There may soon be another MAK owner in Vegas..
