New Years Day Feast

Cleaned out some things in the freezer to make way for some new... Had some friends and family over for a little Post New Years Eve meal...We did a rack of short ribs, some bbq chicken sandwhiches, a few different kinds of sausage and after judgeing last week I had to incorporate some duck fat so I made some duck fat roasted fingerlings...

Rubbed with the favorites..

Short ribs went on the Mak running at 220 and 2 hrs later added the rest for 30 min then upped it 275... Sausage was already pulled in this pic and put in the warming box..

The fingerlings where cut up and mixed with some duck fat, BPs Desert Gold and garlic salt with pepper and some fresh grated parm... Put those on at 400 when everthing else was pulled...

Cut everythng up and mixed with some pepper plant and back on the MAK for 20 more min as the potatoes finished...

What a feast Dan! And I can tell you that I know those potatoes roasted in the duck fat had to be good (we did that last week)!
