More frozen fowl fun today!

20 pounds of Turkey breast boulders..

After some time in the sink, the foil comes off easier. (sort of - there are a few pieces still stuck in cracks/crevices, so I will dig them out when I sliced the birds in half)


Bringing the flavor today: Carolina Treet and Jan's Rub.

Into the Traeger, skin side down, at 250°-ish.

I trussed them with some elastic rotisserie ties.

4 hours into the cook, I'll go out and jam some Maverick probes in them. I like the pull the birds at 160°, then into a covered pan and into the coolers for some rest time.

Oh, and I'm running BBQr's Delight Pecan in the hopper.

Around the 3 hour mark, I added a couple Chicken Stockcicles.

They'll go in the bottom of the pans as the turkeys are resting, then I'll skim the fat and bottle them back up and freeze - they can use it for gravy, reheating, etc.

I'm not going to hit my 3:30PM estimate... 152° and 146°. They still have a little ways to go. Very windy today..

I order them from GFS Marketplace. I'm not sure if they have stores out on the West coast or not. Any foodservice provider (or if you have a buddy in the restaurant business) should be able to get them, or a similar brand.

I'll cut them in 1/2 tonight and weigh the pieces to see how much was lost. They were 9.7 and 10.3 pounds in the foil and packaging..

I have done those before exactly as STC instructed me and shown you here. I have a friend in the restaurant business who ordered them for me. That flavor combination with the smoke makes the best smoked turkey lunchmeat you have tasted. Sometimes I'll get a package of the sliced turkey out of the freezer, thaw and warm it and while that's happening make a quick gravy to put over it. Makes a great warm turkey sandwich, po' boy style.

Thanks! These will be delivered whole, but at home, I slice them up for sandwich meat.

And believe me, they make a ton of sandwiches...
