Dry Ribs

Did a rack of St. Louis spares for the wife and I last night. Used Carolina Treet for a glue and Yardbird for the rub. smoked for about six hours no foil, when it was time to sauce took a sample and decided the rub and glue combo was so good that sauce wouldn't help. Purists would cry, but the meat was almost falling off the bone, and the 2 judges loved this combo!

Those look great! I did dry ribs this weekend (no foil) and liked them more than the ones I have done with sauce. I've gotta try that Carolina Treet, I've heard it is a secret weapon.

The 'dry' in the title threw me... We call that cooking 'nekkid'. ;)


Ribs look good to me! I do them the same way with CT as the glue, and then some kind of 'Memphis' rib rub.

Definitely get some CT and try it.

I have CT and ordered some plowboys today and it's about time to do ribs again.....
