Costa Mesa Comp Dinner 6-8-12 Strube Wagyu Goodness!

Tia Strube was kind enough to send me a strip loin and 4 tri tips for the comp dinner in Costa Mesa California...this being where I grew up there were lots of great old friends...so I needed meat!

I heated the MAK One Star up to 250

Then I trimmed the Strube Wagyu and used Sriracha Hot Chili Sauce as glue and Big Poppa Money as the rub.

I would give this ten stars ...it was that good the money and the sriracha and the MAK smoke were unbeatable in the flavor profile department.

Great looking eats BP!

Did anyone complain about the heat from the sriracha? Or did it tone down as it cooked?

Looks Great!!!! I've had a bottle sitting around in the cabinet for a long time, you and STC are really inspiring to use it more!
