Thicken thighs for lunch round two

I picked up more thighs with the plan of using buffalo sauce,adobo and soileaus on them. I called an audible and changed it up at the last minute. I ended up mixing some gunpowder seasoning and head country seasoning and then deboning the thighs.

Dusted and ready for an hour of smoke then a quick cook to finish with the MAK set to 450.

Chili the chicken looks good!

I love gunpowder but the only thing I don't use it on is chicken. It is a little strong for chicken IMHO. Never thought of cutting it with another rub ;)

I agree with the gunpowder a little goes a long way. The combination of the the gunpowder and head country was exceptional!
