Prime Flat Iron Steak on the Memphis Advantage

Let me see how few comments I can get today...yesterdays will be hard to top!

Heat the Advantage to 500 with Grill Grates
Season the Steak with a light dusting of Big Poppa's Little Louie with pepper
Then hit it with Big Poppa's Money Rub
Sear for 2 minutes a side flip and turn and 3 minutes a side...rest for 10 minutes and enhoy

Flat iron is a great cut with tons of flavor and very tender you cook hot and fast...it tasted real good I had Brad and Jody over....there were no leftovers!

I've never cooked one and don't remember seeing them here..kinda like tri tip. They just started showing up here in the last year.
Toss me a tortilla and some peppers...a couple slices of that flat iron steak and I would be a happy guy!
 
Looks great BP! I know you have so much experience that you proabably don't use Thermapen to test IT, but just curious what IT you guess it was to get that color?
