Doing some bologna today. Stuffed into Hukki casings.

The 2 are a total of 5 lbs.

Hanging in my Bradley this time but next 5 lbs is going in my MAK.

They done, cooling and bloom right now.

These i hang in my Bradley. In my make i have to make them smaller chubs and sit on racks. I was thinking on taking one of my Bradleys and cutting the bottom out and fitting on the side smoke of my MAK.

NePas, have you thought of writing a book on sausage making? I'd buy it in a heart beat! Even an e-book would be great.

My mom says i pick it up from great great uncle's back in the west around the 1800s. I'm related to the Youngers on my moms side and cattle rustlers on my dads side.
