Panko Crusted Dover Sole ala MAK Griddle

Heat the Two Star to 400.

Take the sole and lightly sprinkle with seasoning of your choice I used Hasty Bake Greek and Little Louies Seasoned Garlic salt

Dredge in a egg bath
Coat with bread Crumbs...I like the breading so I egg wash and coat twice
Sprinkle with Hasty Bake again

Take 4 tabs of butter and a drizzloe of olive oil and put on heated griddle
Cover for 30 seconds
Put fish on for 1.5 minutes flib for 1.5 minutes

Slice some lemon to serve as a bed...Lightly squeeze a little fresh lemon and then go get em.....

ps the sole was from Costco and was quite good

Pankos are key. I buy the 5 pound bags at the depot.With fish sometimes instead of egg wash. We use bbq sauce or ? as a glue and then the pankos.

This thread inspired me. Don't have the MAK griddle for the 1 Star, so the Sizzle-Q had to (barely) suffice. Tilapia instead of Dover Sole. Seasoned the flour with garlic and pepper, and seasoned the bread crumbs with lemon pepper, Kirkland Organic No Salt Seasoning, and granulated garlic.

Laid on Meyer Lemons and accompanied by home-made chipotle mayo. It was delicious!
