did a bone-in center cut pork roast today, boned and then tied it back together, rubbed it with lemon olive oil, shallots, garlic, black pepper, thyme, rosemary & marjoram
Into the Traeger on smoke for about an hour then turned it up to 375
also did this recipe Chili-Brown Sugar Delicata Squash with Pears | Eating Well roasted delicata squash & pears tossed in brown sugar, chili glaze
out of the traeger
much easier to carve without the bones
