Ok Im on a kick today.

You hear people talkng about their "flavor profile" What is it? Isnt every recipe a flavor profile?

A flavor profile is the creation of a balance of the four main taste receptors.... Sweet, Sour, Bitter, Salty...and a fifth Umami. Umami is a near abstract but is critical in BBQ.

Every recipe has a flavor profile...some just suck.

The best examples of Flavor profiles in bbq are rubs or sauces....You start with the Umami.for expample Meat is one and MSG is referred to as a tenderizer but is pretty much all umami...THen you try to make a harmonious blend of Sweet, sour, bitter and salty....You hopefully great a flavor that is like a little mini journey..there is the first thing you notice...then the collective taste and then hopefully a nice flavor trail or slight emergence of one of the flavors.

For the rub we used on the Pork Neck...we tried to layer our rubs to create a basic ingredient of our eventual flavor profile...we used Honey rub...then lemon pepper, then tumeric then honey rub and then chili flakes.....qwe hit all the markers on that one and it was great....

when you are trying to understand and create keep in mind the four basic things to balance and which ingredients belong to which flavor.
