Started with a whole chicken...

Fire roasted on the top burner. This brings out another flavor profile and tenderizes the flesh...

Now slice open along the vein and use your fingers to loosen the seeds then rinse them out...

After 30 minutes I bumped up the Memphis temp to 400F and gave the chicken a flip...

Those peppers were fantastic and the chicken moist & juicy. The rubs were great on the chicken!

Tandoori chicken starter and chicken tikka masala with basmati rice plus Naan bread

Ok so cook what we want? Ok this one of my favorite dishes and my wife doesn't care for it much... Good thing she is gone this weekend :)

First the players

A big part of this dish are the spices... Clove, bay leaf, cardamom, cumin seed, coriander seed, cinnamon stick, pepper corns and fresh ginger, garlic, lemon, and last but not least chilies

All of the spices ground and mixed with plain yogurt (and red food coloring for that cool look)

Now on to the chicken tikka masala... Remember that whole breast? Here it is chopped up... Sorry no picks of the next few steps but the chicken goes into a "stew"of tomatoes with a bit of water and the same spice palette that went into the tandoori sauce. Cooked down on the stove for a few hours

Pretty darn good. Kids liked the cherry chops. The wife and kids took my corn, they loved the corn. Butternut was just ok.

JH Summer Peach BB ribs

Start with 3 racks of baby backs from Sams. Rub with John Henry's Summer Peach rub

At the three hour mark, time for some foil love with:
butter
Brown sugar
More rub
Honey
Red wine

Stuffed Pork Chops

I should have used some thicker pork chops for this cook, but this is what I had in the freezer.





For the stuffing I used provolone cheese, green chilis, and chili in adobo sauce, and some cooked up pepper bacon.

Started by cutting a pocket into the pork chop and adding the chili in adobo sauce in first. Then took slices of provolone cheese and added green chilis, and then another slice of cheese and the bacon, and then topped with another slice of cheese.





Finally stuffed all that inside...





Seasoned with BP Jallelujah Bacon Jalapeno & BP Money and wrapped in some brown sugar bacon to seal it up. (bacon post to come later on)





Onto the smoker with Sugar Maple pellets in the hopper and the tube.





Added some brussel sprouts with butter, minced garlic and sea salt, and a couple of pieces of garlic toast.





Decided to add some more cheese.





Plated up! Decided to top the pork chop with a little BP Happy Ending.

Pulled Pork Sammie's

We flew our youngest son Jake home for his birthday. He wanted barbecue, so we've been cooking almost everyday since Thursday. His favorite is pulled pork. He got a new camera for his birthday, and took all the photos.
