Cornbread

After watching the cooking video on the MAK grill site I decided to give the cornbread a try. The corn bread tops were the best!

Had to add the ribs to the mix. I tried Blues Hog Smokey Mountain BBQ sauce. It's by far my favorite bbq sauce right now.

Oooh that looks good. I love the way the tops split like that. It's like they're bursting out of that pan trying to get eaten.

The cornbread takes me back to a long-ago childhood. My mom used to make corn bread mufffins, hot out of the oven, sliced and with a pat of butter and a spoonful of grape jelly. I'm ready to be tucked in now, Mom.....

We only use cast iron for corn bread - nothing cooks like it.

As a side note - we also use our cast iron to sear steaks - we smoke them for about 30 minutes and then sear them off in a ripping hot cast iron skillet with just a touch of oil in it. We adapted this technique from an episode of America's Test Kitchen a few years ago. I won't cook a steak any other way now - just nothing seems to compare. I'll post a cook the next time we have steak..
