On the Smoker for 30 minutes 450* then i will turn i down to 250* for the rest of the cook.

Meatloaf with a kick!

I decided to go with Meatloaf with a little kick to it.. here is how the fun began. I took 75% ground beef with 25% hot italian sausage and mixed. Then I chopped an onion, red pepper, and green pepper. Then cubed cheddar and pepper jack cheese. Mix all of this with the meat mixture. Then added worcestershire and beaten eggs. Then a healthy dose of BP double secret, package of dry french onion soup and some oats for a binder. Mixed thoroughly and then form into a loaf.

Then on the Memphis at 270 for a good smoke with a couple of spuds coated in butter and BP double secret.. when almost done I mixed up the souce - store BBQ souce for a base, then add brown sugar, molasses, and lemon juice to taste. Souced twice at the end and bumped temp to 290 to caramelize.

Now it is on to dessert - brownie s'mores. Start with a classic brownie mix. Put in cast iron skillet and onto the Memphis.

When the brownies are almost done, chop some grahm crackers and add a layer

Back on the Memphis to melt everything together and brown up the marshmallows

I have to say, this was a great tasting meal, but those brownie s'mores will put you into a sugar coma in a hurry!

Chile Verde and cornbread

On these cold and wet winter nights, casseroles, soups and stews take center stage. Tonight, we wanted Pork Chile Verde.

It starts with pork butt. I deboned it and butterflied it to get more bark. Seasoned with worcestershire and Desert Gold.

Onto the MAK after 4 hours at 300 it's ready to pull and rest

Rested, it's time to cut into cubes and add to the pot

Into a pot with carmelized onions, garlic, cumin, oregano, stewed tomatoes, diced green chiles, and cilantro. Let it simmer an hour.

Time to get the cornbread going. Onto the MAK at 400F

Chile Verde with grated cheese, chopped onion and sour cream! Cornbread slathered with butter and Mike's Hot Honey and add a cold beer!! A simple and tasty cold rainy night meal!

Please, take them back! They are killing us. I didn't think they could get better, but they are AWESOME cold! Our son has been here twice now for some meatloaf and s'more, and there is still 1/4 of the pan left!

chicken comes off and I bring it inside. Go out to give the ribs some love and when I get back in I am missing some chicken. Wife and kids must have needed a snack.

Yep it was good. Turn in plate could use some work. Really enjoyed the rooster ribs. Beans were a hit. Defiantly liking my chicken and rib cooks. Need to start venturing out to some pork butt and brisket one of these days.

Turkey in the Cold

-21 Celsius today but had to make some turkey for Christmas Eve. Started with a free range local turkey:

Next brine time (cranberry juice, orange juice, water, salt, garlic, ginger, and some spices):

Got busy and forgot to take pics of the rub, basically brown sugar, red pepper flakes, fresh thyme, lemon zest, fresh cracked pepper and a couple other spices. Rubbed under the skin as well. Stuffed with apple, orange, onion and garlic. On to the grill:

Turned out excellent so moist. I have made a similar turkey on the gas grill before but this was the first time on the pellet grill so much better...
