Doing some mini pepperoni chubs (fattys)

Going to use Apple Pellets in my Bradley. I need to do the Bradley for the low 160* start. My MAK wont go this low.

Cure added to 1/2 cup water.

Pepperoni mix added to water, Mix well.

Mix added to 2.5 lbs of 80/20 GB. Mix well

Ok now pay attention....HAHA

Soaked corn husks for the casings :)

Tie the ends off with strips of husk making sure the meat does not squeeze from the ends.
