OK the Texas Crown is a name and brand I gave what is called 'choice wagyu' it is the usda and its clever branding insisting thaat something that 's marbling is beyond us prime be called choice. Wagyu beef is graded on a scale.....normal wagyu is 5-8 on the scale above is callied Mishima....3-5 is called choice.

That "consistent" marbling is out of sight!! Choice?? MY CHOICE!! The cooked pictures got to my taste buds. Great looking meat, BP!!

So when will the "Pappa's Packopeppa" be availble for the rest of us to try? A new rub, and I'm still not over the Jalapeno rubs!!

That is some awesome looking meat! Holy cow!! I might have to try some of that stuff one of these days.
