i made some pork and bacon wrapped shrimp marinaded in a Thai sauce,
took some oil,garlic,cilantro,green onion,chili past and soy sauce and marinaded the pork.

Wrapped the pork and shrimp with bacon

Put them on the bamboo skewers

Pour the marinade over them and let them set in the frig for a couple hours.

Great flavor and the bacon keep the shrimp and pork very moist.

It was my wife's birthday on Saturday so I made her as many things that she likes as I could. I started with some bread. Garlic thyme bread to be exact. Here are the ingredients.

She likes to eat healthy so I made a turkey mushroom filling for my ravioli. I seasoned up the turkey and left it in the fridge for a while.

chopped up some mushrooms and garlic and mixed them in with the turkey, put them into a pan and on to the Traeger along with my bread.

While that was working I rolled out my pasta and added some basil leaves

The wife wanted flank steak fajitas so that's what she got.

I marinated the flank steak for several hours in a new marinade she found.

Next I got some beans and cheese ready for the smoker.

With the griddle in place and the MAK heated up burning oak pellets its time to cook.

Next I put some tortillas in the warming drawer to pick up some smokey goodness.

I can eat fajitas everyday! Mexican is my favorite. The seasoning marinade was pretty good and the steak was perfectly cooked.
Overall the meal was a home run! It was quick and easy and I didn't have to stand in the frigid temps too long.

Breakfast, the BEST meal of the DAY!

Okay, this is a very old recipe in my family. I have never heard of it / seen it anywhere else, but my family has been making this since I was a kid (just a couple of years ago). This will be my first try on the grill and I am thinking it is going to be awesome! We call it “Egg Bake” and it goes like this:

The participants…

8 – 10 eggs
3 cans cream chicken soup
¾ soup can milk
2/3 lb Monterey jack cheese
1 table mustard
½ onion chopped

Mix the soup, milk, mustard, and onion in a sauce pan. Cube the cheese and send it in for a swim. Bring the mixture to a simmer to melt the cheese and get everything creamy

Pour half of the mixture in the bottom of a baking dish

Add the eggs regularly spaced..

Pour the rest of the mixture in around the eggs

Onto the Memphis at 290 for about 80 minutes, or until the eggs are cooked

Toast an English muffin and lay on a plate open face – one egg per ½ muffin and plenty of souce

Mrs. Kite and I were starving!! Don’t tell anyone, but she and I finished the whole pan by ourselves!

I have made this dish way more times than I can count – I generally make it when I have overnight company. It is ALWAYS a major hit!!!

I ran them on SMOKE for about an hour, then moved them to the warming area.

Set to HIGH and install grill gates.

Smoked Chili Nacho's

Started like this..

It has been a while... Lots has been going on, it has been way on the cold side, and the my doc put me on a harsh diet so I haven't been using the MAK as much.

But had to have some snacks for the game today. I ended up making healthier versions of my game day favorites.

Chicken wings sort of...

Start with some chicken breast and Money

I used just one egg for a binder on these... So I put the mix in little cups and popped them in the freezer for a bit to give them some form

Mad Hunky Hot Whang Wings

Headed to a Superbowl party and knew I wanted to bring hot wings! Started with 6 lb of drummets and 3 lbs of wings.




Seasoned up with Mad Hunky Hot Whang




Here they after a overnight rest in the fridge ready to be tossed on the smoker




On the Yoder at 200° smoking with Pecan pellets for an hour. Then bumped the heat up to 275°

I couldn't take them to the big game with out doing a quality check first! LOL

Hot Whang flavored wings, blue cheese dipping sauce, and a cold beer!




Glad I tried them before we got there.... they were gone in a flash!!

Second Place SoupyJones and his Fresh Bread and Turkey Ravioli. Making freash bread is tough enough but also fresh pasta for your ravioli took this over the top. Looks deliscous!

First Place Chilihead and his Steak Fajitas. What can I say, one of my favorite dishs and yours was prepared to perfection. That steak looked unbelievable! Well Done!!

Congrats to all the entries, as usual it was a tough choice. Let’s keep them coming and thanks to BP for all he does.
