I started out by cubing my chicken (not shown) and getting it into a marinade. I wanted to get something like tzatziki flavour into the chicken. Here are the ingredients with the exception of the oregano.
Mixed it up and threw it in a ziplock for a long rest in the fridge. Not an easy thing to take a nice pic of.
Next I got my tzatziki ready. Here are the fixins for that one.
Just to make this one my own I wanted to try some home made pita. Got a recipe and my ingredients.
While my pita dough was rising I rinsed off and dried my chicken and got it on skewers. I dusted them with a bit of LLwP, dry mustard and onion powder.
I let that sit for a few minutes while I started the Traeger and rolled out my pitas.
I had intended to make my pitas on the traeger, but a nasty wind seemed determined to steal my heat so I only did my chicken and a few tomatoes on the grill.
As a result I made the pitas in a 450 oven in a cast iron pan.
I like how they look.
Chicken is in after 15 min at 325.
Made a sandwich with lots of tzatziki, some lettuce, tomato and lots of my chicken on a warm pita.
Add some Greek salad the wife made and it is a great dinner.
In all it was pretty good. The chicken was where I wanted it to be for tenderness and moisture, the pita was great, but overall there was a bit too much lemon for my liking.
