Butter Poached Lobster Grilled Cheese

Smoked some cheese on the Mak.

Let’s start with some caramelized onions

Make a beurre monte

Just water and butter. Do not let it go above 190

Good to go

Blanch the lobster tails for about 3 minutes. Put skewers in to keep them straight.

Let cool. Take out of the shell

Ready to poach

Into the buerre monte. Bring to a temp of 160

Rick - I love your panini press!! That thing must have cost a small fortune! The whole thing looks just great.. but I am not sure I could bring myself to put a lobster tail in a sandwich. After poaching in that buerre monte it would go straight to my mouth. Nice cook my friend..

Actually Home Depot have them at a very reasonable price! ;)

Rick, I checked with HD and they said they did not sell panini presses. They mentioned Target down the street would be a better place for one. However HD did sell tinfoil and a brick for cheap. LOL

I also like the look of all of that. Perfect lobster, great cheese, all of it. Extra points for your special culinary brick.
