Well I have heard lots of hullabaloo about whole smoked chickens...so I grabbed a couple. One for me, one for the parental units.
Spatchcocked & ready to get a massage
rubbed up nice with Jallelujah with bacon & SM Pecan rub
Into Minnie you go--set on smoke
about an hour later, lets add some fresh corn, brushed with butter & sprinkled with Jallelujah
Corn on the upper 1/2 rack! Look at the gorgeous skin on those birds.
Done & resting in the kitchen
Plated--with half an Italian Sausage & potato planks from the SS Drum. My sous chef Kristenzpoppa is rocking the UDS.
Sorry for the delay in posting, that was last weekends cook. This weekend is up for grabs...have some shrimp in the freezer they may get experimented with.
