One of the great benefits of pelletsmoking is the quality and quantity of leftovers...We never buy any kind of deli meat or anything...and when all else fails there is soup! I smoked a spiral ham on my MAK for Turkey day and here is a take off on my pulled pork soup but using the ham and the bone.
Easy Three Ham Soup
Olive oil
Dice 3 onions (also red bell peppers)
3 cloves of crushed garlic
your favorite rub and some black pepper
cut the ham into nice chunks
3 quarts of chicken broth
3 big cans of your favorite baked beans
Heat some olive oil in your soup pan
add onions to the hot oil
Coat with your favorite rub I used Smokin Guns Sweet Hot. (I think that like it I used a jar this week alone!) and some Big Poppa's Double Secret Steak Rub.
Saute until translucent then add ham bone and toss it around to sear it slightly
Add the ham and saute until the chunks are nice and hot
Add the three quarts of chicken stock and bring to boil
reduce to a simmer cover and let go for about an hour and a half
Add the baked beans cover and simmer for 20 minutes.
Serve with cornbread or biscuits!
