Grouper and Pasta

Got some great looking black grouper from my fishmonger today

Sauté some shrooms

Then some peppers and onions

Put the fish on the mak.

Heat up some Marinara and add the shrooms

Drop some fresh pasta

Sauté a little asparagus and lets plate. Add the pasta to the sauce. Plate the pasta with some fresh grated parmesan and some fresh basil. Add the fish . Let’s eat

Looks like a great meal to me. It seems like you get awfully nice fish in Atlanta. I wish I could get stuff like that where I am.

That grouper looks fantastic! What temp and how long did you cook the grouper?

Since you have a 2 star like me this will be a little easier to explain. Put the filets on the mak and turn on. I used a combo of cherry and orange. Once the heavy smoke stops 10-15 minutes pull the fish off. Bump the mak to 375. Season the filets with fresh lemon juice and Tony Chacheres seasoning. Once temp on the mak is about 375 put fish back on and cook till just opaque. About 15-20 minutes depending on how thick they are. As with any fish dont over smoke. If you want a it temp about 150-155. Good luck!
