Weeknight Ribeyes

Wife bought some Ribeyes for dinner last night.

Here's what I did with them.

Nice looking meat. Not as much marbling as I like but oh well.

Some compound butter for finishing. Butter, shallots, blue cheese, plenty of black pepper, fresh thyme. Pinch of cayenne.

Sauté some shallots until carmelized

Used a pastry hand mixer to incorporate the softened butter and blue cheese. Shallots cooled.

Still trying to figure out posting pics to posts. Lets see how this works. Going to have to continue in a second post

Looks great! Next time try some roasted garlic in that compound butter. Makes it mo better!
