Done a lot of different ways. I wanted the easiest. Boneless chicken thigh meat. trimmed and cut into two strips. Season with "Sweet Seduction". Apply shredded four cheese. Roll the chicken and the cheese then wrap the bacon around the outside and pin with a toothpick. Season heavy with "Sweet Money" making sure to have all sides seasoned. I have grilled between 325 and 425. Prefer the higher heat. At 425 about 10 minutes flip and cook 10 minutes. Remove from grill and put on a drying rack for about 10 minutes then serve. Can be assemble ahead of time which makes it nice.

We serve them whole . I cut this one up for the picture.

Simple but complex, I too will try this. I am thinking a piece of a Jalepano pepper inside the roll would go good also. Maybe's someones Jalepano rub would also work. Something to try.....
