I can hang 150 lbs of SS and 200 lbs of Slim Jims, Two 4x4 racks of jerky. And keep a constant temp of 170*

That's a lot of sausage! Do I guess right that its for holiday gifts?

I'm quite happy with how the Summer Sausage turned out last weekend and people's reactions to it when they tried it. It was even better after sitting a couple more days. I was thinking about doing up 40 or 50 lbs. as Christmas gifts.

Thats recent hunt sticks going. got 100 lbs waiting for the grinder yet.

The longer the SS sits for the smoke to marry with the meat the better. I did SS and smoked cheese as gifts last year, was a big hit.
