Ok so my wife is out of town so I have some time to experiment with new recipes... I have become addicted to the happy ending finishing rub. I have to admit I wasn't a big fan at first but it has really grown on me. I have found it is really good on popcorn and eggs! Any way I thought how can I get more of this wonderful stuff in a pork chop - stuff it!
Lets start with the main ingredient and mix it with some cream cheese (this is so good by itself but I think I will try this in some ABT's some time) Just mix a few teaspoons in and let it set in the fridge for a few hours to let it get all happy.

Now for the all of the players.... I mixed the cream cheese happy ending with some mild breakfast sausage (browned it up first) to make the filling. And of course the happy ending delivery device, thick cut chops.

All stuffed and ready for some rub

On the MAK with some hickory pellets at 275 about 20 mins a side, then I cranked it to high to mark them on the grill grates... Then a quick glaze with some sauce.
