Scott - I'm getting ready to do one this evening on my 2 Star. It is "resting" in the fridge right now. Hopefully it comes out as nice looking as yours. What temp did you run at and about how long did it take?

I started off on the smoke setting for approx 30 mins. and then bumped the heat up to around 375 F. until IT reached 140-145 F. seems like it took between 1 1/2 hrs. to 2 hours. It was fantastic. I used half ground beef and half ground pork. Good Luck!
