St Louis Spares and Tri Tip

Haven't been able to cook the past few weekends, so needed to get back to the MAK.

Started with some St Louis spares with 3EYZ, BPS Money, and some Happy Ending.



Put on the MAK at 275°F:



After a couple of hours and just before some foil love:



Time to get the Tri Tip ready. A couple of Costco Tri Tips with Balsamic glaze and BPS Money rub:



On the MAK (still at 275°F) with the ribs in foil love:



Ribs out of foil love and Tri Tips flipped at 115°F IT:



Setting the sauce (mixture of Blues Hog and Head Country):



Ribs cut up:



Tri Tip sliced (it was definitely more red than the picture shows):



Plated up:

I just fired up my PC after spending 15 minutes in the kitchen looking at an empty refrigerator and a LONG shopping list for later this morning. So what's one of the first things I see? St. Louis Spares and Tri Tip. Two of my favs. In the same cook.
